The All-rounder bread dough:Good for Pizza, Meat Pies, Rolls… You name it!

2 mugs flour

4 Tbsp oil

2 tsp yeast

1 tsp baking powder

½ tsp salt

1 tsp sugar

Water as needed

~ Spinach Bread ~

Dough:

3 cups flour

1 1/2 tsp yeast

1 tsp salt

1/4 stick margarine

3/4 cup milk

1/4 cup water

1 egg

In a large bowl, mix together the dry ingredients. Melt margarine in milk and water. Beat the egg in a small bowl. Add water-milk mixture and HALF of the beaten egg (save other half for glazing) to the dry ingredients and knead to form a pliable dough. Cover and let the dough rise for 1 hour.

Spinach mixture:

1/2 bunch of spring onions (3-4 stalks, whites only), chopped

1 (10-oz) pkt. frozen spinach, thawed and drained

1 (8-oz) pkg. cream cheese (or use half cream cheese PLUS half sour cream)

salt & pepper to taste

1 Tbsp butter

Saute chopped whites of spring onions in butter for 3 minutes. Add thawed spinach and let cook until liquid is dried. Add cream cheese and turn off stove. Stir to combine the mixture and season with salt and pepper according to taste.

Method:

Roll out dough into 3 spans (palm lengths). Spread 2 Tbsp butter or margarine over 2/3 of the dough. Fold and turn. Roll out and fold again. Cut dough into two. Roll each one out and cut three strips about 12" long and 1.5" wide. Spread spinach mixture evenly between 6 strips (2x3 strips). Seal strips and plait dough. Let rise. Brush with remaining beaten egg. Sprinkle sesame seeds and bake in a preheated oven at 450 degrees for 25 minutes.
